Paani Puri, a Fried, Crisp Shell Stuffed With Chick Peas and Tangy Juice

‘Pani-Puri’ is probably the most popular street food in India. This dish has many names throughout the state and many types of fillings served with ‘puris’. Puri is nothing more than a special fried crust. You can get it in any Indian grocery store. ‘Pani’ means water or water in this context.

I love this food so much when I get to India I immediately walk to the ‘Pan-Puri’ stall and eat my portion without worrying about germs or dirty water (so far I was lucky). The most painful is from the street stalls where people gather from all walks of life to eat this meal with tears caused by the spicy taste of ‘Pani’.

I learned this version of ‘Pani-Puri’ from a friend from ‘Madhya Pradesh’ India. It differs from our usual recipes in that tamarind and ‘Amchur’ (green mango powder) are used to give sourness to fruit juices. Here Green mango is used, which adds a unique flavor to the delicious ‘Pani’. This version of ‘Pani-Puri’ is very popular among all our friends and I always do it for potluck party too.

Ingredients

  • Green Mango – Half of it if small
  • Mint leaves – a fistful
  • Rice husk leaves – Fist
  • Green Peppers – 3-4
  • Ginger – 1 small piece
  • Black salt – 14 spoons
  • Masala ‘Pani-Puri’ – 2 tbsp. You can get it in any Indian grocery store.
  • Lemon juice – 1 tablespoon
  • Salt and sugar to taste

Completion

  • Soybeans – 1 cup soak overnight and cook in a pressure cooker
  • Onion – 1 finely chopped
  • Chili powder – 1 teaspoon
  • 1 potato, boiled fruit
  • Ripe tamarind juice – 1 tablespoon. You can get it in Indian grocery store.
  • Chamasala and salt to taste. You can get it in Indian grocery store.

Recipe

Take the green mango and cook it in a pressure cooker or steam oven and strain it into the oven. Now gradually add the pulp to the water and check the sourness of the water.

Take the root of lemongrass, fermented rice husk, rice and ginger, beat in a blender, mix well, then put this soup powder in water and mix well. Add 1-2 teaspoons of sugar. Add black salt, salt and masala and leave for a while. Filter the water in a large sieve. Add lemon juice. Your luggage is ready.

Completion

Take the beans, add all the ingredients together and grind one part by hand.

Fill puri with water, pour water over it and sprinkle chat masala on it and enjoy!

Note: You can skip the sugar section if you prefer the spicy ‘pani puri’ tea.
