I’ve always had a penchant for the unusual, especially when it comes to food. I don’t know where it comes from, but I take adventure food to a whole new level. Over the past few years, I’ve made it a personal goal to eat as many exotic animals as possible. I am proud to have eaten more exotic animals than most people I know.

One of the problems I had at first when I started my quest to eat strange things was how to prepare them. Here are my 10 favorite unusual animals I’ve eaten and some tips on how to prepare them. Granted, some of the items on the list may not seem outlandish to some, but I bet the average American wouldn’t touch the delicacies on the list.

1. Alligator

Alligator actually has a very mild flavor, similar to the dark meat of chicken. Think of it as chicken but with more meat. Alligator meat is very tough, but if you can, try it in an etouffee recipe.

2. Wild boar

While related to pork, they don’t taste the same. Pork tastes like a cross between pork and beef. Wild boar works well in any recipe where you want something heavier than pork. The first time I tried wild boar it was in jerky form.

3. Shark

To be honest, the shark is very vulnerable. I thought it tasted like swordfish or other bland whitefish. However, among the meats on this list, shark is one of the easier meats. I always find it at my local supermarket. Prepare the broth as you would the whitefish. I personally enjoy grilled shark.

4. Eel

Okay, so if any of you eat sushi, chances are you’ve eaten watermelon. Eel, or unagi as it is known in Japanese, is a very common sushi topping and one of my personal favorites. I’ve always thought that the eel had a distinct smoky flavor that paired well with the saltiness of the soy sauce.

5. Kangaroos

While some people have trouble eating Cousin Roo, kangaroo is the best meat I’ve ever eaten. Seriously, it’s that good. For red meat, it is lean and tender with a natural sweetness. I had no problem finding some when I was in Australia, but it might be a little difficult to get to America. If you find some, buy it immediately.

6. Bison

It’s getting easier to get bison, but it’s still delicious. You may need to go to a special butcher to find it, but its smooth, rich and creamy taste is worth it. Bison is delicious with cumin.

7. Cricket

Cricket, surprisingly, is beautiful. Not very meaty, it tastes like a cross between a peanut and a potato chip, crunchy, moist and salty. The first time I bought it was in my eighth grade Spanish class. My teacher brought fried chickpeas and I was one of those brave enough to try them. Annoy your friends and family by dipping chickpeas into chocolate chip cookies.

8. Ostrich

I thought it tasted almost like beef. Ostrich, although a bird, is similar to red meat, but is actually much leaner than beef. If you love the meat and flavor of burgers, but worry about the fat and cholesterol intake, then steak is a perfect choice. Remove the beef from the classic recipe and make Ostrich Bourguignon instead.

9. Frog

Yes, it really does taste like chicken, almost exactly like it in fact. Frogs, as you can imagine, are not very meaty and you can only really eat their legs. I find that frog legs are perfect substitutes for chicken wings.

10. Camel

Of all the supposedly strange meats I’ve eaten, camel is the saddest. It tastes exactly like a cheap steak, only with an aftertaste and almost bitter. My camel steak was not a pleasant dining experience. If you must try it, at least soak it in your favorite marinade.
