Raclette… what is raclette?

Traditional Swiss

The classic or traditional Swiss raclette is a simple dish that can be enjoyed by everyone. Invite your maid or your boss’s family to discover the unique and delicious taste of Switzerland.

What you need:

– 2 pounds/1 kg of small new potatoes

– 1 1/2 pounds / 800 g Swiss Raclette cheese, sliced

Side dishes:

– A choice of ham, such as proscuitto, parma ham etc.

– Baguettes

– Carrots, sour onions

– Fresh pepper.

First, wash the potatoes and boil them in their skin until cooked. Put the potatoes, cheese and all the side dishes on the table. Place a piece of cheese in a raclette dish and place under the grill to melt. When the cheese is melted, stir in the potatoes, carrots and pickled onions.

Sprinkle fresh pepper on top and enjoy the melted cheese curds you’ve made with your choice of ham and a slice of warm baguette. This serves 8 people.

A wonderful wine to drink with this dish is a light white wine such as Swiss Neufchatel Blanc or California Fumé Blanc.

Brie Raclette

Brie Raclette is a new take on an old tradition. As our tastes evolve and time is always of the essence, replacing the traditional Raclette cheese with Brie is a tasty and satisfying solution.

Raclette cheese is not always easy to find. So, when you’re in a hurry, use this recipe instead of Brie cheese. Brie Raclette will melt faster and the cheese is very easy to find at your local grocery store.

What you need:

– 1 1/2 pounds of brie cheese, finely chopped

– 1 1/2 pounds small new potatoes or boiled potatoes, cut into 1-inch pieces

– 1 1/2 pounds broccoli, thick stems removed, florets removed

– 1 1/2 pounds of mushrooms, halved or quartered if large

– 2 Tbsp cooking oil

– 1/2 tsp of salt

– 1/2 cup of cocktail sauce

First, preheat the oven to 400°. Cut the brie into thin slices and divide the cheese between four small ramekins or tins.

Next, place the potatoes in a large bowl of salted water. Bring to a boil and simmer for 10 minutes. Add the broccoli florets to the pan and cook until the potatoes and broccoli are tender, about 5 minutes. Remove the broccoli with a slotted spoon and drain on paper towels. Drain the potatoes and if using new potatoes, cut them into quarters when they are cool enough.

Meanwhile, toss the mushrooms with oil and salt. Place mushrooms on a baking sheet and roast until sliced ​​and tender, turning once, 10-15 minutes. Remove the pan from the oven and then turn off the oven.

Place the cheese balls in the oven and bake for 5 to 10 minutes until the cheese is just melted. Meanwhile, arrange potatoes, broccoli, mushrooms, and cocktail onions on individual plates. Serve each portion of melted Brie immediately, along with the vegetables for dipping.

Wine recommendation: Try the wines of the Loire Valley in France, such as Chinon or Saumur-Champigny. The flavor of the fruit not only completes this raclette dinner, but will make you feel warm, loved and oh so good!
