The Chronicles of Narnia Introduces America to Turkish Delight

December 2005, a movie called The Chronicles of Narnia – The Lion, The Witch, and The Wardrobe was released based on the book by CS Lewis. It introduced the audience to four British children living in England during World War II, who move to the countryside with their never-existent uncle. Children are forced to entertain themselves. During a game of hide and seek, the youngest daughter Lucy came across a beautiful wooden wardrobe. When Lucy climbed into the back of the closet, she found herself in the snow in the land of Narnia. Lucy finally returns to her closet and tells her siblings about her discovery. Finally, her brother Edmund follows Lucy through the cloak and finds Narnia for himself. Here, Edmund also meets the White Witch, who calls herself the Ice Princess and Ruler of Narnia. He is very interested to hear about Edmund’s brothers. She offers Edmund a unique cure to bring his siblings to her ice palace. She introduced him to the Turkish delicacy and introduced this very old dessert to American moviegoers.

It is said that Turkish Deshta originated in the Middle East under the name lokum centuries ago. It is also known as Turkish Paste for many years. Today, it is very popular among Middle Eastern and European cultures. Its base is primarily corn starch and sugar; but more modern recipes use gelatin and sugar. Its original flavor was rose water; however, over the century, fruit juices, such as lemons and oranges, have been used for various purposes. Peanuts and walnuts are often added for a different texture. When the mixture is done, it becomes soft and sticky and cut into small cubes. It is then dusted in powdered sugar and is best stored in an airtight container.

Turkish plain

Two cups of granulated sugar

One cup of water

An envelope and a half of granulated lightning gelatin

Juice of one orange

Juice of one lemon

Red coloring

Half a cup of chopped walnuts

Dissolve the gelatin in half of the cold water for ten minutes. Put the remaining sugar and water in a saucepan and bring to the boil, add the soaked gelatin and the orange and lemon juice. At 240°, boil it gently, add color and nut meats. Process until creamy, roll into a loaf, first dip in cold water, to a depth of one inch. Leave it until it is dry, turn it on the table, and cut it into cubes; roll in powdered sugar.
